With kale, avocado, walnuts and pomegranate seed, it packs a nutritious punch while being a delicious-to-eat superfood. It pairs very well with the Lemon Balsamic dressing, but you can use any vinaigrette you like. Try taking this one to a dinner party as a beautiful side salad!

Instructions

Place kale in large mixing bowl with salt, 1 tablespoon of the lemon juice and 1 tablespoon olive oil.

With clean hands, massage kale reaching to bottom and turning for 5-10 minutes until kale is soft and slightly wilted.

Add additional ingredients on top, squeezing remaining 1/2 tablespoon lemon juice on avocado if using.

Add dressing, toss. Adjust seasoning to taste.
