Hello and welcome to Whole Bite Nutrition. I’m Shauna Thomas-Gilbert and I’m a major foodie, lover of photography, music, and a massive animal lover. Like many of us, I had always considered myself “healthy” until I found myself with an auto-immune condition deemed untreatable. Frustrated yet with an innate knowing that there must be another way, I embarked on a path that led me to conquer my auto-immune woes through food, meditation, nature, and movement. This ultimately led me to enroll in a Functional Nutrition school that was life changing. Bursting with all this new knowledge ( and with some nudging), I started this site to help empower others to take control of their health.
Fair warning, I'm not your typical nutrition guru. Here, we are not dogmatic and are inclusive of all dietary lifestyle choices, including Vegan, Paleo, Keto, etc. What you won’t find in my recipes are gluten, refined sugar, processed foods, refined vegetable oils or any other nasties. I personally limit dairy, but come on, who can live without a little Parmigiano Reggiano now and again, right??
I believe every bite is either contributing to or depleting our vitality. We can change our life through food, and I will show you how. Cheers to a life well-nourished!
My quest for a healthier me, began in 2015 when I was diagnosed with an autoimmune disease (a rare form of psoriasis) that had no known cause and no known cure. The drugs options offered had terrible side effects (like liver damage) and I decided pretty quickly that I wasn’t going to live a half-life because of this. I had always thought I had a healthy diet and lifestyle, however as I delved deeper into researching my disease and nutrition in general, I learned about how bad my “healthy” diet had been. I visited 7 doctors for my psoriasis issue, and each was as much a dead end as the last. Ultimately I took things into my own hands and changed my diet, began a meditation practice, and traded hiking and walking for my high intensity work outs. I cut out dairy, sugar, alcohol, gluten, all processed oils and legumes. I loaded up on mass quantities of vegetables, nuts and seeds, fruits (in moderation), grass fed meats, wild caught fish, eggs, and good fats. I read every label and eliminated all processed foods, buying only non- GMO and organic whenever possible.
Because of the lack of information I was getting about my condition from my doctors, I spent a lot of time on the internet, teaching myself about health and nutrition. Eventually I went back to school here at The Academy of Culinary Nutrition. While I was there, I learned the science behind healthy eating. Through my schooling, and 25+ years in the health insurance business, I know how many chronic diseases are caused by a lack of proper nutrition and lifestyle. My desire is to share what I have learned and help others to address their dietary issues by eating whole, healthy food.
The best way to change your diet for the long term is with a plan. You also don’t have to totally stop eating your favorite foods, which is where I come in! We take the foods you know and love, and just replace those ingredients that contribute to the decline of your health, with those your body tolerates better and that builds health. As always, if you have a health issue, please consult your (preferably integrative /functional) medical practitioner. Like me, you may find yourself craving roasted chickpeas instead of the fries!
I love to curate easy to prepare meals with real food that taste damn good. My healthy meal recipes will have your entire family eating whole, real food that will help them to feel their best, sans the gluten, refined sugar, and dairy.
