  1. Preheat oven to 350 degrees and prepare cookie sheet with unbleached parchment paper. Set aside
  2. In mixing bowl or standing mixer, add tahini, softened butter (or ghee/coconut oil), sugar and honey. Mix until smooth.
  3. Add the egg and then remaining ingredients except chocolate chips. Once well combined, stir in the chocolate chips.
  4. Place batter in the freezer for about 20 minutes. When slightly firm and using a 1 inch scoop or spoon, drop onto baking sheet slightly flattening, and placing about and 1 1/2 inches apart.
  5. Bake for 10 minutes, checking after 8 minutes as ovens vary. Place on rack to cool.
