This amazing salad is an homage to the beautiful late Summer fruit, spicy arugula and fresh walnuts all found at the local Farmer’s market. Not only is this salad oh so good for you, likewise and more importantly, it is utterly delicious!
The arugula becomes slightly more bitter as we near the end of the season. Therefore, we pair these greens with the sweet fruit, creamy vegan cheese -recipe link here, balsamic dressing, resulting in balance and harmony for your taste buds. Depending on the season, feel free to sub out different fruits and greens, along with your favorite nuts or seeds. For example, apples or pears in the Fall, pomegranate seeds, winter melons, blood oranges in the Winter, and so on. If you decide to use the hemp seeds, you thereby amp up the protein. Furthermore, you can also add some lovely roast chicken, salmon, good quality prosciutto or ham or other quality protein. Most importantly, remember this is your salad, so add whatever you like. I could (and basically do) eat this type of salad daily, as it is quick, fresh and unbelievably satisfying. Although Summer doesn’t last forever, the options with this salad are endless.
