Refined Sugar Free Choco-Nut Crispies

Removing refined sugar from your diet can, at first, seem to limit your choices. I’m here to tell you that you don’t have to give up sweet things all together, you just need to know which sweeteners are better to use! These refined-sugar-free choco-nut crispies use honey and vanilla to sweeten naturally, balancing the bitterness of the raw cacao without being overly sweet. If you like it a little sweeter, add a touch more honey. Also, did you know that cacao is a super food, high in magnesium and a proven mood elevator? Score!

Feel free to experiment with your favorite nuts or seeds, or add some quality unsulfured dried fruit like cherries, cranberries or blueberries. Just don’t overdo it.  Although a more natural form of sugar, these little nuggets are high on the glycemic index and we want to keep that in check. Instructions
  1. Line a baking sheet or tray with unbleached parchment paper or silpat.

  2. Combine cocoa butter, cacao and honey in small bowl set over simmering water or place in top of double boiler and gently melt.

  3. Remove bowl from heat and mix in remaining ingredients except sea salt if using.

  4. Place by spoonfuls onto lined baking sheet and sprinkle with sea salt if desired.

  5. Refrigerate until set.
