Ok, I know this is a pretty big claim, but trust me here peeps. If you think you don’t like kale, give this one a try. Here’s the secret, you have to give your kale a good old rub down. There is nothing that annoys me more (well, at least in the salad world anyway), than ordering a kale salad and getting bowl of tough, prickly, greens that could seriously choke a horse. For the love of God, please massage your kale!
Its super easy—just place your washed and dried kale in a bowl with the salt, lemon juice and olive oil as outlined in the recipe and go to town. You will immediately see it begin to soften and wilt and this is a good thing. Otherwise you really won’t be able to digest this properly and get the requisite benefits of said kale.
Kale is A Super Food
Kale is a bitter green so we’re pairing it here with other tasty nutrition powerhouses, such as creamy avocado, walnuts and pomegranate or dried cherries to offset some of the bite. That along with a super delish homemade dressing with just the right amount of acidity and sweetness from the balsamic. On that note, please please please make your own salad dressing. It takes minutes and you can avoid all the scary additives and sugar found in the store bought variety. I promise, once you go natch, you’ll never go back, hee hee:-)
