If you’ve never tried cashew “cheese” you may hesitate to try it based on the sound alone. How does a cashew become cheese? What really happens is that the cashews are softened by soaking for several hours, and then blended to create a creamy paste. When you add the spices to the paste, it turns into a wonderful creamy, cheese-like product that even picky eaters will love. Try this as a substitute for grilled cheese, and I’ll bet you won’t miss the “real” deal. Though it takes a little planning (you have to soak the cashews in advance) it is well worth the time!

Cashew “Cheese”
This cashew “cheese” is delicious and has none of the bad stuff that the regular dairy cheese has.
Be sure you choose a non-gmo, unfortified nutritional yeast. I like this brand. “Nutch”, as we call it, is high in B vitamins and give that cheesy, parmesan flavor. Give it a try!
